MessageJoan, After successfully fighting a 1000 acre landfill and burn plant in Stuyvesant, NY on the Hudson River, I asked myself how can small farmers make a living when they cannot sell all the fresh food they produce.
My answer is to freeze and vacuum package local food and combine them into meal kits using cooked whole grains and dry beans, vegetables and fruits. Visit my unfinished new website. I want to share ten years of research with others growing nutrient dense local foods and consumers eating nutrient dense foods via on line U tube videos and power points. Food waste will be a problem of the past. Healthy frozen food design will solve food related diseases with the added bonus of convenience and exciting new preservation opportunities from the new and old food varieties.
