Cooking from "authentic" recipes can be a lot of fun and can introduce you to new flavors or ideas, but it's definitely not the only way to cook. All that matters is that you and anyone you may be dining with enjoy eating the end result!

I know what you mean about BLTS. At the same time, I found myself empathizing with their struggles and rooting them on whenever they tried to break out of their comfort zones. Much easier to relate to than a group of prom kings and queens that might appear on other dating shows haha

I think I actually prefer switching out the meat and stock with dried shiitake and the stock that comes from rehydrating them.
