MessageFirst order arrived yesterday as requested pies to be burnt.
I come from a bakers family, my grandfather was a pieman in south london and as a kid I remember the hissing of the pies going into a coal fired oven, no thermostats in those days, the burnt pies had a unique taste and I must say this pieman has got it spot on with the filling, flour used and his cold water pastry mixes.
Almost impossible to burn a pie and keep the underbelly bleached and soft
wouldn’t mind betting you stone bake pieman. SPOT ON will be ordering again,
my grandchildren have heard the stories over the years, now they will taste it.
